They are not afraid to venture beyond the frame of the traditional Icelandic bakery to develop new methods in bread making. They also experiment with ice cream and confectionery, and it might surprise you to hear that they aspire to create unusual and adventurous cocktail food, and other festive foods. They only use fresh eggs and authentic butter and even make their own crème fraîche. They avoid taking shortcuts and methods of mass production, because they want to deliver the best possible quality to their customers.
